This may be a silly question, but have you tried Beatrix/Beatrice/Bettrix/Bettridge as well as the obvious Elizabeth/Eliza/Betty variants?
Never trust anything you find online (especially submitted trees and transcriptions on Ancestry, MyHeritage, FindMyPast and other commercial web sites) unless it's an image of an original document - and even then be wary because errors can and do occur.

I notice that sister Annie is in 1901 Census with parents and was born 1878. I don’t suppose there was a mix up. Just a thought.

That looks very like her as there was no Ann(e) M*cdonald  on the earlier censuses.

 The 1881 had an Anne Ross, s in l, aged 19 (b.c. 1862).

Betsy and Ann are both on 1881 census. Ann being born 1876.
Only Betsy is on 1891 census, as by then Ann had left home, and I found her at a nearby Inn as domestic staff

Also a grandson George, aged 1, b  Knockbain on the 1901.  It's worth checking his birth reg.
