Well done, that all seems to fit very well.
And in 1901 the family is is Whitchurch which is where Alfred was living when he enlisted in the Army. The nok given as James Knight is a bit odd. But the recruiting officer may have just asked him his father's name and where he lived, not "who should we contact in the event of an accident?". Elizabeth may have pretended to be the widow of a James Knight, so that is who Alfred thought his father was.

Well, you've all been working on hard on it.  I to thought alfredcharles was Elizabeth Knights son, however was throws me is that Eluzabeth married Charles Hobbs in 1886, the a Alfred Hobbs born 1888 Worting and died winchester.  I think I'm about to answer my own question.  Could these Alfred's be the same boy.  Blimey what a plonker course it is.    Thankkyou all for your inputs.  You certainly showed me the way  xxx

1886 yes, but different month, late enough in Q1 to be registered without penalty early in Q2 1886

I quite frequently find a stepchild gets listed with his/her stepfather's name on censuses. Or sometimes alternate between surnames. It all depends on how accurately or fully the head of household filled in their form, and how accurately the enumerator transcribed it onto the form we see (1841 - 1901).
