1881 census was taken April 1881, he could have possibly changed jobs by 1882? As for being a postman in January 1881 that would concern me I had the correct man, as this one in 1881 states he is a watch motion maker

I think the death you found is possibly of the William Elliott found in 1851/1881, he is not with family in 1861/1871 the info from this connects to a brother John.

I have not looked for another as was just searching for William with a brother John.

Added: Have you considered DNA testing? The info on marriage certs is only as good as informant knowledge and truthfulness in what is told to informant.
