I got my certificate yesterday. My Great Grandad was called William Sunderland and was a General Labourer.

Not sure how this helps  :-X

Pro's: 1927 is the year my grandad was born

He was Catholic

It states William was a Labourer.

Because he is a good fit, and there is no other.

Apart from what you already mention:

No other William Sunderland married recent to 1927 in Co. Wexford.

And William's father was John. William's son was John - fits traditional naming pattern (son named for grandfather).
