Amis Family Norfolk

Hello, I was wondering if anyone could help me work out where Charles Amis was on cenuses as a child or who his parents/siblings/children were.
This is him: Charles Amis    born 5th May 1812 in Handsworth, Norfolk
(there's no birth record that I can find for him and so the only baptism I can find for a Charles Amis at this time I'm assuming is probably him)
On the baptism it says his parents are: Thomas Amis + Elizabeth Shreeve (Shreeve maiden name?)
I have Charles from the 1861 census onwards (they moved to Kent), but struggling to find them before this.
On an old family tree it had Charles as marrying Susannah Jeffries in 1837, which I found, and then marrying again to Frances Phyllis Slapp in 1853, which I also found.
I thought I'd found Charles living with his first wife Susannah ''Susan'' in the 1851 census (under Ammis not Amis) living at Jews Lane, Bradwell, Suffolk. But now realising this can't be him as this same family are on the 1861 census.
A bit confused about the Amis family because lots of trees have them using different surnames such as ''Ames'' ''Amies'' ''Amiss'' ''Amyss''; interestingly his second wifes mum maiden name is also ''Amies'' and if I'm correct Elizabeth Shreeve's mmn is ''Ames''.
Just a bit confused! Any information is appreciated  :)

Charles Amis    45 [transcribed as 65 on ancestry] gardener, widower b Southrepps
Robert Amis    10 b Hanworth
John Amis    6 b Bessingham
Francis Amis    77 lodger b Hanworth

On 1861, son John is 17 and b Bessingham

James Robert 1841 and John Henry 1844 per GRO Index have mother's maiden name of Chapman

John Henry was baptized 24 March 1844 of Charles and Mary Ann Amos

father was a labourer

living next door are James Amys 37 and wife Ann 32 with children James 5, Ann 3 and Mary 6 months.
( James Amys married Ann Leeder 10 June 1831 at Hanworth) children Ann 1838 and Mary 1840 on GRO index have mmn as Leeder.

*Charles Amoss age 2 was registered Erpingham 1838 mmn Chapman

This could be Charles, but would that mean he married Mary Ann Chapman rather than Susannah Jeffries?
The Frances lodger could be an aunt (or mother if Elizabeth Shreeve was wrong) and James Amis/Amyss a brother for Charles
Will look to see if I can find a birth/baptism for James to see who he puts his parents as

edit: just seen a baptism for an Elizabeth Amis born 1805 mothers name Elizabeth Shreeve - Charles' sister if the Thomas Amis and Elizabeth Shreeve thing is correct
and another one for Maria Amis in 1803
and another one for Thomas Amis in 1810

There is a Charles Amis base born son of Fanny Amis baptized 28 July 1805 at Hanworth.

Fanny = Frances in 1851

The marriage of Charles Amis Wd. to Frances Slapp 30 June 1853 in Guist Norfolk

His father is Samuel- coachman (could be made up for respectability)
Her father Benjamine - labourer

Charles is a Game keeper
Frances is a needlewoman
