There is a Catherine Doran, buried at Ford RC Cemetery on 4th Dec 1942, the address was County Mental Hospital Eccleston.

Don't know enough to know if this was a different place to Rainhill or just an alternate name.

1947 & 1948 electrol same address

John Doran
Catherine Doran
Catherine Davis

Daughter Catherine would not be old enough to vote, so think the death given in 1942 is unlikely for Catherine nee Finn?

1949 John & Catherine Doran

Added
1938/39 has John & Catherine Doran so she is on the Electrol for the address
1936/37 same as above

Thank you all for your responses!  :)

I think the 1942 death could be her, I've contacted the Liverpool Records Office to enquire about her Rainhill records, which will confirm or deny the death record hopefully.

As for the later Electoral Register appearances, I'm not sure how to interpret that, perhaps it is another relative of John? The Rainhill address at death does seem to be rather a big coincidence if it isn't the correct Catherine.

There is a tree on Ancestry by a relative of Catherine which gives her death as 1942 in Rainhill.

I think John Doran had been married before to Ann Gallagher, which accounts for the other people in 1939.

I think Ann died in 1926 and the 1921 census has a family which matches John, Ann and their first child.
