Trying to unravel the Smith family!

In my tree I have a Thomas Smith b.1786 in Desford,  baptised 27 Dec 1786 in Hinckley, and married 15 Sep 1810 in Rothley to Deborah Jones. I'm looking for his parents.
 
Similar trees have them as Thomas Smith b.1760 in Desford and Fanny Foster b.1760 in Hinckley, they married in 12 Feb 1782 in Hinckley.  Can anyone help me with this please, is it correct, and who were Thomas's parents and Fanny's parents?  Thank you.

From the image of the marriage register:

Thomas Smith of the South End of Mountsorrel married Deborah Jones of North End of Mountsorrel by banns.

Both signed by mark. One of the witnesses was an Elizebeth Smith who signed her name; was she possibly a sister? Other witness was John Hewitt.

I can see that he gave his place of birth as Desford on the 1851 census. For others, here is the census:

Thomas Smith, son of Thomas & Fanny, baptised on 27th December 1786 in Hinckley, was baptised alongside his 2 sisters, Martha and Elizabeth.

Hinckley is about 10 miles from Desford.

There is also a Thomas Smith baptism in Desford:

Thomas, son of Thomas & Elizabeth Smith, baptised 16th November 1783.

However, this would make him a couple of years older than he claimed.

Death for Thomas' wife in 1855:

SMITH, DEBORAH       70 
GRO Reference: 1855  J Quarter in LEICESTER  Volume 07A  Page 125

Expected to find Thomas alone in 1861, but he is apparently living with his new wife Eliza?:

Possible marriage for them in 1858 in Leicester. If correct, Eliza's surname at the time of marriage was Burn.

Thank you for your replies, but I think it's made me unsure if I've got the correct Thomas Smith!
Could it have been the Thomas who was baptised in Desford in 1783, the son of Thomas and Elizabeth?  I just don't know!

The Hinckley baptism was for two children and makes no mention of whether they were born or lived outside the parish.

Martha Elizabeth and Thomas, children of Thos. and Fanny Smith, baptised 27 Dec 1786 at St Mary's, Hinckley.

Deborah Smith was buried at Welford Rd on 30 April 1855, age 69, previous address Upper Brown Street. I had a look to see if any family members were buried with her, in case there was a clue to be had there, but the other 4 occupants of the plot all had the surname Coleman, and were buried between 1883 - 1951, so I suspect that's not going to help.

What did Thomas and Deborah call their children? Any clues there?

I've just searched for Smith baptisms in Leicestershire between 1810 -1830, with parents' names Thomas and Deborah. This gives 4 hits - Thomas (1816, Crofty), Mary (1819, Crofty), John (1822, Leic St Mary), William (1825, Leic St Mary). Those are basically the most common first names for that era so not much help there either!

But were there other children born between 1810- 1816?

Again, as Smith is such a common surname I'm not sure if this helps or hiders, but there is also a record of a 1780 Settlement Certificate for Thomas & Elizabeth Smith, with the two parishes named as Desford & Croft.
