On the 1851 Census John Caffray, age 50, confectioner, husband of Jane who died 26 March 1853, Scarborough, was born Dublin.
On the 1861 Census, John W Caffray, age 58, confectioner, husband of Ann, was born 1803

John W Caffry and Ann Lancaster married Dec Qtr 1853, Scarborough.

That certainly could be the missing link that he quickly married after his first wife died.
