Thank you for all your help so far, I'm not sure how to reply individually so I'll do a summery.
The missing marriage of Ellen Deacon and William Spooner is one of my dead ends. I have a marriage certificate for Ellen Spooner to John Jones from a family member that states her parents are William Spooner and Ellen Deacon. It states the father's occupation as undertaker (not to sure what that is). My second evidence for the parents is on Australian Birth, death and marriage record, Ellen Spooners death certificate also states Deacon and Spooner.
No siblings that I know of for Ellen Spooner, she's quite the mystery.
I am beginning to lean towards maybe an orphanage or young girls home.

Possibly Ellen in 1881 census
22 New Ormond St, St Andrews, Finsbury, London.
Ellen SPOONER, boarder, umn, 18, Domestic serv. out of place, born Middlesex, London
Class: RG11; Piece: 339; Folio: 40; Page: 13;

Looks to be a boarding house. Lots of other young women there in same circumstances.

Yes, I have looked over that record a few times and I also believe that would be her. Possibly just before she travelled to Australia. She was 19 when she arrived.
But other than that I can't find her anywhere in census records before then or birth records....is it possible she grew up in an orphanage and chose to go to Australia for a new start?

There is a female child as yet unnamed registered Islington surname Deacon

Ref: March quarter 1862 Vol 01B page 221

No mother's maiden name on GRO Index so Illegitimate.

Hannah Deacon, 22, admitted to Islington workhouse, 30 January 1862. Cause Pregnancy
Female child (of Hannah), born same day.
