I would say the 1881  census is John and Jane Simpson. Now looking for deaths in Angus. No luck at the moment.

Jane Simpson, other surname Davidson, died in Coupar Angus in 1891, age given as 73.

John Simpson, 66, died in Coupar Angus in 1883.

Might these be your John and Jane?
Never trust anything you find online (especially submitted trees and transcriptions on Ancestry, MyHeritage, FindMyPast and other commercial web sites) unless it's an image of an original document - and even then be wary because errors can and do occur.

Both FindMyPast and the index on SP have Susan. I can believe that one transcriber/indexer would have misread it as Susan, but not three (I assume you are not using FindMyPast because the FindMyPast transcription of the 1871 has John's occupation as tailor, not sailor).

You and I both have access to the image, same as everyone else, for the cost of 6 credits.
