Would like to find out any more information about my great x2 grandfather John William Stevens, I believe he was born in 1883 in Withyham, Sussex (not 100% sure).

I know he married Ada Alice Smith in 1906 and they had three children (Nellie, Percy & Ada) however I can't seem to find out who his parents were.

This is a possible from 1891? In langson, Speldhurst, Kent. Address Rook Hill (sewage farm)

Marriage says father is John a Labourer

1911 has him born Withyham
There is a niece Ada Lilian Stevens age 2 mths, have you followed her up?

GRO reg for her has no mothers maiden name.

John William's eldest, Nellie, has the middle name Wilmshurst

Yes, mckha489 I had found out about the niece but could not find anything more about her, I was especially curious about why she was registered as living in her uncle/aunt's house at such a young age.

But you had said she was a daughter.
It would appear she was brought up as their daughter.
Her birth cert would say who her mother was. Perhaps Lily B. (Judging by the name) If that census Mabel found is correct.

John and Ada have their own Ada - life must have been confusing with both of them in the household
