 I am trying to trace the baptism and parents of John Phillips who married Mary Ann Williams in 1904 in the 1911 Census he is shown as born 1885, but I think he was a year older their son was born shortly after they married.

You could buy their marriage certificate to at least give you his father’s name, and a better chance of finding the family in the earlier censuses. Was he born in Cowbridge or living there?

there is a school record from Maendy County Primary Sch Cowbridge, for a John Phillips born 4 Nov 1884, parent or guardian Thomas Phillips, Maendy Canol. That birthdate would show as age 26 in 1911.
