In 1841 the family are at the Royal Ordnance Hospital in Woolwich
Wm's occupation looks like Director General's Gardener?

I've been intrigued by his occpn in '41. Was it a perk and relief from military duties or a punishment!!

They were an army family. Eliza Melhuish Larder had a niece Sarah who had loads of sons in the army and she received a letter from the Queen due to her husband's and sons service. Eliza's sister also married two army men. My Great great Uncle William , inserted 'Larder' into his Christian names, presumably as some sort of homage to his aunt.
