1. Couldnt find record that states maiden name of Morgan
2.  Cant be the right Ellis Williams who died in 1842 as his youngest daughter was born in 1845 so he had to be alive in 1844-45.
3 George's middle name could be Thomas.  Everything I find has George T although he did name his son George Theophilis so that could be his middle name.   I did find a record in Angelsea that shows a Elinor with parents Thomas and Sarah Griffith born in 1861 which would seem more likely as her sister was born in 1863.  However it makes even seem stranger that they would leave a 3 yr old behind when the left for the US and her obit says she was born in 1855.  As far as I know Elinor did not reunite with her family until the 1900 when George and Sarah moved to TX George Jr moved there in 1910

That was the reference on the GRO index for purchasing the birth certificate that you mentioned.

ADDED
The index shows mothers maiden surname Morgan so not the one you are looking for

I see that you have posted about this family before.

This 1880 US census has George & Sarah with son George T -  I would have thought if the father was George T as well he would have declared that on the census.  Also it says he was born in S. Wales and he is age 39

That Thomas and Sarah also baptise a son Griffith Griffith in 1863, same parish
Also a son George in 1866
