Hello there!
This concerns my great-grandfather, Patrick McCabe, who was born in 1833 in Ireland. He married Sarah Hannah Tucker in 1864 in Ramsgate, Kent. At the time of the 1871 Census, Patrick and Sarah were living in Gravesend (ecclesiastical parish of St Peter/Paul) and they were still residing there in the census ten years later; he passed away in 1883. However, on Ancestry quite a few trees have Patrick as having been born in Carrickmacross, Co. Monaghan, yet I see no evidence for that on any of the documentation. Am I missing something?

On the 1863 Marriage to Sarah Hannah Tucker
Patrick McCabe age 31 Sergeant, 83rd Regiment. Father: John McCabe, Coachman

In the 1871 Census:  in Barracks in Milton Gravesend with wife Sarah & children
Sergeant Patrick McCabe Soldier, Hd of fam'y, age 38, b Ireland

In the 1881 Census: Milton Gravesend with wife Sarah and 5 children
Patrick McCabe age 48 , Pensioner Barrack Sergt

This all leads to : Army  Regimental Service Records

83rd Regiment of Foot
3230, Sergeant Patrick McCabe
Served 21 years & 27 days, 9years 7mths of which were abroad in the East Indies
Discharge 20 May 1873 after completion of his 2nd Term of service
Enlisted at age 19 in Liverpool on the 15 April 1852
Born Carrickmacross , Co. Monaghan.
Description: 40yrs & 1 month. 5' 6" tall
Sallow complexion, Hazel eyes, Dark Brown hair.
Trade:  Servant
Intended residence: Liverpool


So looking for a birth around April 1833 - in Born Carrickmacross , Co. Monaghan.

Following on the information that Patrick McCabe was born Carrickmacross, Co. Monaghan in 1833 or thereabouts that may be as far as you will get. Civil registration of births didn't start until 1864 and it looks like possible church records, if he was Catholic, start too late.
Carrickmacross comes under 2 districts in R.C. registers- Maghaire Rois & Magheracloone-
