I checked all the local churches for the marriage without anything turning up AND did manual search through pages in civil registrations online- ZILCH!

But the mystery is finally solved. George and Margaret never married.  :o

After checking for children's births in Family Search I got a birth for daughter Mary Ann on 14 Dec.1858 and another daughter, Rachel, on 18 Dec.1871. Rachel's birth lists parents as George Wilson & Margaret Henderson (deceased)  and was registered on 3 Jan.1872 and illegitimate is written.
So, knowing Margaret Henderson must have died between the birth and it's registration and that she likely died in the same area, I searched for a Margaret Henderson in Anderston dist. 1871/1872.
Margaret Henrderson, single, died 28 Dec.1871 (same address as Rachel's birth), registered 29 Dec. Cause of death given as congestion of lungs 9 days following delivery which fits with Rachel's birth and informant was George Wilson. Margaret's parents listed as Alexander Henderson, farm labourer, and _ Rossborough so I'm off again to check my family tree files.

Cleo- have the above certificates which I can send if you are interested.
Away sorting out DNA matches... I may be gone for some time many years!

Wow, that’s absolutely brilliant! I didn’t realise they had had another child, although unfortunately the outcome wasn’t a good one. Thank you so much Aghadowey, for your detective skills, I had searched for so long without finding anything. It’s really much appreciated. Presumably on the birth of Margaret they gave a false marriage date, to appear they were all above board, so to speak.
Thank you Rosie for suggesting the second wife’s marriage to find George’s parents.
Just before I came away I found the 1851 census from Dalry, Ayrshire, which lists a George Wilson aged 16, along with his family, all born in Ireland apart from the last daughter, Rachael. I wasn’t sure if this was him, but now with the Rachael connection, I think maybe it is. His parents are listed as Thomas and Jane Wilson, but I’m not sure which part of Ireland they came from. George is also listed as an ironstone miner - perhaps he went from that to being a steamship stoker, although he is listed as being a hammerman in 1871.

I think the family you mentioned on the 1851 census in Dalry Ayrshire immigrated to
Great Salt Lake Utah .They immigrated 1852 and George is with them
