Is This Gudsleigh Street? The letter 'G' is similar to other 'G' on the document.

I think it is Endsleigh Street, which does still exist.

This was the address of the informant of the birth and by the look of it, it was some sort of institution, perhaps a lying in hospital?  Going to check some books....

I agree. I had the same realisation, and it seemed to be a welfare hospital, which makes sense so close to the end of WW1.

It was the Duchess of Marlborough House, a maternity hospital and part of the Royal Free Hospital - see here (scroll down at bit to find the relevant section):

In the 1921 census 20 and 21 Endsleigh Street, St Pancras seems to be a "Duchess of Marlborough's Home" with HoH being a Lady Superintendent Ethel Mary Hellier.

The list of good works maintained by the Duchess of Marlborough is one that is constantly growing. Her enthusiasm in the cause of the East End poor is of the practical kind which involves not only constant visits to the East Ham Hospital (of which she is chairman), but large contributions to meet its liabilities, and gifts of every kind for its inmates. In conjunction with this hospital her Grace founded a home for the poor wives of prisoners and their young children. She took a house in Endsleigh Gardens a year ago, and equipped it with every modern convenience. It accommodates thirty women, and the crκche provides for as many children. Known as the Duchess of Marlborough's Home, it is non-sectarian. There is a medical officer and a staff of hospital nurses, and the entire cost of the institution is defrayed by the Duchess.
