There are a few odd things: their age difference, the fact that they moved to Liverpool, and that
I can’t find their marriage. Ancestry wants to go to a Margaret Vernon who married a John Leigh, but even if she was widowed and married as Margaret Leigh I haven’t found them so I can’t see why Ancestry is making this connection (except for that Vernon lodger).

Agree, it's very odd.  John Leigh in the '61 shows birth as Carrington, Cheshire 1838.  Margaret wife, 1839, Hulme.

Daughter Margaret Ann was b 29.8.1873 but wasn't baptised until 12.10.1874 St Peters Liverpool. The baptismal register shows Joseph as a Miller

Elizabeth Alice was b  9.12.1876  baptised 8.1.1877 also St Peters - Joseph is again a Miller

I can see why people have linked to Margaret Leigh - the Margaret who married John Leigh had father John, and there's a Margaret Vernon b Hulme the right time period, with father John

However the census Margaret's father was a porter or carter. The marriage cert John was a Farmer.

1881 aged 40 b Manchester
1891 aged 55 b Chester Cheshire
1901 aged 59 b Stapleford Cheshire

We'd 'accepted' that Margaret Ann Vernon then Leigh then Platt was born Hulme, Manchester in 1839.  We've got her marriage to John Leigh in Manchester on 25 April 1859, father John Vernon, farmer.
John then died 1869 in Whiston Workhouse, buried 9 April.
The family then seems to disintegrate.  We think Margaret got together with Joseph Platt but can't find a marriage ...

See my reply above.  On both the 1891 & 1901 she gives her birthplace as Cheshire
