I just read your message and am only offering it as the one David found.
Here is a bit more information about that person, that I have just found.

Another possibility based on that marriage record to Ann Arthur

William, 5 yrs son of William Varcoe plus siblings.

William Varcoe of 1847 is on the censuses as born in St Stephens. Aged 19, he married Ann Arthur there in 1865, but I can't find them afterwards.

Just replying to this.
I posted re the marriage and the child, William with her parents.
Ann is in 1871 as a servant (married) and in 1881, again a married servant but with two possible children = as ‘boarders’.  The second one has a middle name of the householder.
These seem to stick with ‘Varcoe’ rather than ‘Vercoe/Vergo etc.
