I think John PENKETH married Mary Ann COMPTON in 1863 and they came south to NZ where at least four children were born.

There were no recorded children born after 1872 and perhaps that is around the time that Mary Ann returned to England as John's obit stated, and she is seen in Lancashire to 1911 with her daughters.
 
She did not marry again.

Even after all your excellent research for John and Alfred, that still leaves Walter

I have a theory (fantasy!!) that Walter "followed" his brothers.  First, Alfred to Victoria and when Alfred returned to England then Walter traipsed off to John and NZ.   Walter's possible death in 1869  loosely fits the picture.    The answer is out there.   Sadly, we may never know!!
