Ancestry also has the marriage records of the same  church - St Peters Derby - for the period. I have looked from 14 Feb 1841 (3rd Banns reading) until early march 1841. No sign of marriage so it must have been cancelled. They should both appear as single people on 1841 census.
Berks / Oxon: Eltham, Annetts, Wiltshire (surname not county), Hawkins, Pembroke, Partridge
Dorset / Hants: Derham, Stride, Purkiss, Sibley
Yorkshire: Pottage, Carr, Blackburn, Depledge
Sussex: Goodyer, Christopher, Trevatt
Lanark: Scott (soldier went to Jersey CI)
Jersey: Fowler, Huelin, Scott

Unfortunately 1841 doesn't show status or relationships, only age and whether born in the County they are living in.
There's no Peter Heath in Bag Lane Derby in 1841. 🙁

The 1840 banns were in Burton upon Trent so maybe Peter was from there and Eliza from Derby?

 I know they emigrated on the SS Niagara on 13 July 1847. I have 1850, 1855, 1860 and 1880 censuses for Peter and Martha. Martha died in March 1901 and is buried in Catskill, Greene County. I have yet to discover a death and burial for

I suspect John Stonyer died between 1860 and 1880 (I haven't yet found an 1870 US census for him or Elizabeth), but have yet to find a record of his death and burial. Elizabeth I have in 1880, but not after that, and again no death or burial. I will be looking further for these.

I suspect that the marriage I was looking for never actually took place.

I suggest that we now draw a line under this particular case.
