I think it is reasonably clear that the birth wasn't registered.

That being so, OP should look to the parish registers in Hacketstown, and failing that, maybe Baltinglass, where the workhouse was located. Similar advice already given, but at this point it really is the obvious next step.

She is not with Bridget in 1901, when there are the 7 children in the household.
As mentioned previously, Bridget has written 7 children still living, although that entry is crossed through as Bridget is a widow.
I am not putting Mary forward as  mother to Bertie but that she may be one of the deceased children.

As I wrote earlier, the parish record for marriage might give a clue - perhaps a cross reference to a baptism, or the church might hold a baptism record.
Wexflyer, has also suggested a baptism in the workhouse parish.

I find it puzzling that if one of the sons was the father and Bertie was raised in the famiky, why would he not give a father’s name on his marriage.
Was it the same on his second marriage?

Of the four five (see below) daughters, Mary  has to be the leading/only reasonable candidate. She was the only one old enough in 1901, and she seems to have been alive - no death registered for her between 1894 and 1902, or a marriage.
This may be her in the 1901 census, as a servant in Main St. Hacketstown, single, aged 28. Living with two priests and a coachman.
