I haven't found him, but here is what I have tried. From adverts in Bristol newspapers 1840/1841 I have found, as fixed points, the following traders and addresses in St Augustine's Walk Parade:

No.2: Robert Hazard, confectioner [seems to have taken over from John Anderson, tea dealer, in 1840] and also at the same address, F Riddle, artist
No.6: F.L.Doe, cutler & silversmith
No.9: Beames and Hatherell, linen draper
No.12: James Hartland, chemist

All four of these are found in the 1841 census, running in reverse order, although the street is recorded as St Augustine's Back. Between Doe (at 6) and Hazard at (2) there is only one household, Matheas? Beeson, tobacconist.  Between Beames (9) and Doe (6) there are two households, both milliners. There is no sign of Robert Jones in the vicinity.

Following on from Capetown.
Robert left everything to his 2nd wife Elizabeth. Will is also on ancestry. No mention of children.

Will of Elizabeth Jones who died 17 October 1866 is on ancestry. Administrators listed are Ellen Burrow Pidgeon wife of John Pidgeon- Chemist, 34 Oxford Street, Liverpool Lancashire, and Sarah Burrow Hall wife of Thomas Henry Waite Hall- Confectioner, 5 St Augustine's Parade, Bristol. Aforesaid daughters of the deceased.

So it appears the son in law of Elizabeth Jones late Jones nee Burrow took over the shop on St Augustine's Parade.

1851 census, 5 St Augustine’s Parade has three female confectioner’s assistants.

This is Elizabeth Jones , late Jones nee Burrows.
The High Street is the address of her father Thomas Burrow - Baker. 

1851 29 High Street
Elizabeth Jones wid. 46 born St James Bristol   Confectioner  (transcribed as 26 on ancestry)
Robert B Jones - son 20 born St Nicholas Bristol   Confectioner
Sarah B Jones 17   daughter born St Nicholas Bristol.

Perhaps after Robert's death they either ran both businesses per Alan Boyd post about the 3 female assistants in 1851 at St Augustine's Parade.

There are baptisms for Sarah Burrow Jones and Robert Burrow Jones that fit the 1851 Census - but father's name is William (transcript only FindMyPast).u

1841 Census - there's a William Jones, age 35, Bridge Street - is the occupation "Baker" ?
