If your Jessie is the daughter of Robert and Jessie (originally Atkins?), what's the source of the 8 Sep 1910 date of birth (initial post)?

A Jessie May Thatcher's birth was registered Dec Qtr 1908, Oldham, 8d 551 - mother's maiden name Atkins.
The 1911 Census (taken 2 Apr) gives her age as 2 1/2 years - fits a 1908 birth. Her age on the 1921 Census (taken 19 Jun) also fits a 1908 birth. 

A Jessie M Thatcher married a Robert Sills, Dec qtr 1934, Liverpool South.

There is a Jessie M Sills, born 7 Sep 1908, husband Robert, at Southport on the 1939 Register. Southport links to the 1921 Census.

I assumed the birth date came from her father's (Henry Thomas THATCHER) 1915 military enlistment which notes all his children and their dates of birth. (on Ancestry).

I'd spotted the 2 birth registrations (1908 Oldham, 1910 Reigate) but for some reason plumped for the Oldham area and discounted Reigate. There was nothing in previously posted info that drew me to Oldham - odd.

I’m not at home today so can’t check anything.   Jessie is the one born in Redhill (registered Reigate).

I’ve searched, as much as I can for records after the two marriage records.  We are really not convinced on either.  The problem is, there was nobody living that knew of her existence prior to publication of the 1911 census.

I don't have a sub to findmypast, but there seems to be a mention of a Miss Jesise THATCHER at a funeral in 1942 in the Surrey Mirror (Reigate). 22 May 1942.  :-\ I think the death was George REE.

There is a Jessie M WALKER born 8 Sept 1910 on the 1939 register in Aireborough, Yorkshire - have you ruled her out?
I need to have a look at Jessie WALKER in Yorkshire.   On the face of it, she married as Jessie M HOBSON, possibly a second marriage??  That seems unlikely as the marriage was in 1930 when she would have been 20.

I think her middle name could be Margaret

Thanks everybody for your replies.  I am fairly certain that we can rule out the Australian connection.

Jessie was definitely Jessie May and her date of birth was sourced from her father’s military attestation.

I’m going to recheck the SILLS marriage as I am not sure whether I could find the couple on the 1921 census.  I’m not going to have any time prior to the weekend (looking after grandchildren).
