Looking for Ellyatt ancestors but I'm stuck

I've just started researching my family history and I thought it would be pretty straightforward - I have an unusual family name, Ellyatt, and   I think the family originates from Sussex.  I've tracked down my great-grandfather George William Ellyatt in the 1901 census - he was 27, married and working as a baker in Brighton. But he doesn't seem to exist before then! I've searched all the available on-line records and he doesn't appear in any censuses and there's no birth certificate or baptism record. Is this usual? He did register his marriage in 1897 and lists his father as George Thomas Ellyatt who is another elusive figure - no birth or death records or appearances on any census. Was it usual for people in this era to duck any form of registration? Or am I just unlucky?

There is also the following birth (could be a mistranscription of the surname?):

I've had a look at the on-line records too, and would agree with you that your Ellyatt's are elusive.  You could try a request for a look-up on the 1891 census.

Just looking through the various information and dates which have been posted.

George Thomas Ellyatt and Annie Hayler married 20th July 1873.

Their son George William Ellyatt was christened 23rd January 1876 (same day as Anne Abulia), but in 1901 he was 27 which would place his birth at around 1873/1874.  So, were George and Anne twins, or did his parents christen him as a 2 or 3 year old on the same day as Anne?

I know ages aren't always reliable on the census but could George William have been born just before his parents married and baptised at a later date?  If his age is correct on the 1901 census then it was a close run thing between his birth and his parents marriage.  ::)

I would try to get a photocopy of the parish register baptism entry for George William and Anne Abulia and see if it gives any additional information - the local archives office should be able to supply this, or even the local studies section of the main Brighton library.

To Sasha. Nicky and Frances - awesome research, many thanks for your time, effort and advice, it is hugely appreciated. I had found Anne Abulia in my research - interestingly her birth was registered as Ann Ebulia Harvey Ellyatt which shows how flexible names were! I had wondered if her death was registered in 1903 because Annnie Beulah is a similar name but the age is wrong.
And Sasha your thoughts on George William Ellyatt are really interesting - I have a copy of his marriage certificate and he definitely was born in 1873/74 so it's quite possible he was born before his parents married. I will definitely follow up your leads, thank you again!
