On George William's marriage certificate did you have an occupation for his father George Thomas?
Just found on the 1871 census a 19 year old George Ellyatt, born Brighton but living in Kensington, who is a joiner, with his father Francis Ellyatt, also born Brighton and also a joiner.
If you think that this might be your George Thomas Ellyatt let me know and I'll have a go at attaching the census scan.
