If you go to the NLS Mapping section and have a look at the Town plans for Dumfries, the 1850, 25" OS map shows the location of the Grapes Inn as facing onto the R.Nith.  Scaling from the OS plan, the site appears to be occupied currently by The Worlds End pub, as correctly determined by yourself.

The Gen. Roy map of southern Scotland shows Brannockhill lying between Gillsyard and Burnfoot, and just to the west, and south of Bridgend ("Bridge" on the Roy map) which lies to the west of the village of "Loch Whinnoch(sic)".
The site may now lie under, or be adjacent to the Lochwinnoch golf course, depending on the accuracy of the Roy mapping.  Bridgend Hill as shown on more recent maps may possibly be the original "Brannoxhill"

What age does Robert Campbell give on the census, this should provide an approx DoB?

Shetland / Re: Oliver Smith – Mariner

According to the Bayanne website https://www.bayanne.info/Shetland/index.php, there is a record of an Oliver Smith, b.1811, Burra, Shetland, d. 10th June 1872, buried Papil Cemetery, Burra 12th June 1872.

There is also a family tree.

His parents are given as James Smith, Dunrossness, and Barbara Manson, Sandwick, with their marriage date and place 12th December 1809, Sandwick.  Grandparents are Hance Smith (b.1754) and Janet Forbes (b.1755)

Oliver married Jane LAURENSON (b.1821), Bressay, SHI, SCT, (d.Bef 1909), on 7th Nov 1848 at Leebitton, Sandwick, SHI, SCT.

The census information for 1841 and 1851 indicates that the subject was on Havera on both occasions as Monica has already stated.

(Havera (Havra) is an island due south of Scalloway and West Burra)

The following reference should take you to an 1859 plan of the relevant part of Bonhill ( https://maps.nls.uk/view/74415051 )
The plan shows Campbell Street running E-W near the north of the map, and a cooperage at the SW corner of the unnamed street just to the south of, and parallel to Campbell Street.  This street is named as Croft Street on later plans.

Immediately to the east of the cooperage there is an access from Croft Street leading to two adjoining properties, possibly tenement buildings or "lands".  These could potentially be the "Coopers Lane" and "Campbells Land" that you refer to, but without further historical information this can only be surmise.

The cooperage has long since vanished as have the original C19th tenement buildings.  The only remaining early 20th century tenement in the immediate area is at the corner of Croft St./George St. as can be seen on "Streetview"
