Like you, I think ‘Patron’ is a respectful title.

The bits I’ve translated as ‘son of’ and ‘daughter of’ seem logical, but the original literally seems to say ‘of the someone’ and I’m guessing the someone is the father. Maybe the squiggle after ‘del’ is an abbreviation of ‘padre’?
The word before the name of the baptiser may be ‘Don’ – a title apparently used for clerics.
No idea what LV is – maybe a region/parish.
Some of the name transcriptions are a bit dubious.

No idea what ‘Prep’ and ‘Can’ with the little superscripts mean – perhaps ‘can + co’ is short for canonico = canon.
If the baptism date is 12 October, the birth date would have to be earlier, so 27th September makes some sense, but I don’t know what the ‘deci + o’ means.
Anyway, this may not get you any closer to deciding which Zuanne is yours, but it was an interesting challenge!
