Does anyone know anything about the  Metropolitan Convalescent Institution, 203 Sea Road, Bexhill in 1891. and where I would find records if any?

East Sussex Record Office seems to have them under catalogue HH, Hastings Health Authority.  It depends what you are looking for though.

See what you mean about the time scale, I had hoped to look at the admission records as I believe my gt grandmother may have been there, she is not with the family and cant seem to find her elswhere but an entry there fits quite well, so I wondered :-\ as she reappeared with them in 1901.

into 'Google' you will get lots of info about same and access to the Hospital Records via the National Archives web site
