Hi Pop,
I can help with some of this;
1.  Henry's actual birth date.  This is not on the IGI, so sorry can't help with this.
2.  Birth, Death details of George and Maria.  Free BMD gives a death registration for George SHILLITOE, Dec. quarter 1847, Newington reg. district (4 354)  Which looks about right as he's present on the 1841 census & Maria is widowed by 1851.
3.  Info re parents of George & Maria  Can't help with parents & birth details of George, although on the 1841 he says he was not born Surrey but on the 1851 Maria's mother is listed as Ann Field, so that's part of the equation  :)

1841 - St. George the Martyr, Kent Road ( mis-transcribed as SHILLITRE)
HO107/1085/3/27/6

George SHILLITRE  41  Fruit? (can't read the next word maybe merchant?)  Not born Sry
Maria                      41
George                   15
William                   13
Charles                    9
Sophia                     7
HENRY                     5
Edwin                      2

Maria & children all born Surrey

1851 - St. Peter Walworth, Newington.  6 Princes St?  HO107/1567/752/31

Geo. J. Shillitoe  head  unm.  25  Journeyman carpenter  b. Newington
Mary A.  mother  wid.             52                                      b. Horsleydown Sry
HENRY  bro.  unm                    15                                     b. Newington
Ann FIELD  g/mother  wid       90                                     b. ????  Sry?

In 1841 Ann Field, Maria's mother, is at St. George the Martyr, London Rd. St. Peters Hospital or fishmongers.  HO107/1086/10/24/2

Ann Field  80  widow  not born Surrey.

All the residents seem elderly & many are fishmongers  ;)

Hope that's of some help,

jane
