Have taken a look, now know what a "Liberty" is but still do not know what is meant by "the rolls" as it does not say

although if you use google and search for "Liberty of the Rolls" and encase the phrase in inverted commas there are a number of other entries including Old Bailey trial links
as in Google - Liberty of the rolls

The Liberties were areas consisting of one or more parishes  that were exempt from the jurisdiction of county justice courts - they were like small municipalities that were essentially self-governing.
The Liberty of the Rolls roughly occupied the lawyers area presently known as Lincoln's Inn Fields.
