If you check the baptism index on Cambs FHS website at

There's also an 1841 census index on the same site - but I can't see a good match
The George christened 1827 was the son of Benjamin and Amy, but I can't see him in 1841
You can't do an effective 1841 lookup unless you know the surname, so you're asking the impossible looking for a Martha born Coventry. Any 1831 censuses that have survived are of little value genealogically.
Much more effective to work backwards from what you know.
You say their first daughter Martha was born in Poplar in 1864. Freebmd at
http://www.freebmd.rootsweb.com/cgi/search.plhas a birth in the June quarter 1864 in Poplar registration district of Martha Elizabeth Norris, which looks suspiciously like the Martha E Norris age 6 born Poplar in the 1871 census living in Coventry with parents George B and Martha. As they appear in 1861 as being married, on the face of it their marriage should be before 1861. There's a marriage on FreeBMD in the Dec quarter 1860 in Shoreditch between George Broughton Norris where one of the other parties is Martha Gardener, which might be them.
But first I would get the birth cert of Martha b 1864. You'll get her parents' names from that including her mother's maiden name. Then you can find their marriage, which may be the Shoreditch one, from which you will learn fathers' names. Then you can decide if the Wisbech George is the right one.
