I have my Gt Grandfather John Binnie Wallace in Scotlands Census Record 1851 then he disappears until 1881 I believe he was a soldier is there anyway I can trace his regement. I can't find him on English Census either.

Unless you can get some clue from your Census, or have some memorabilia that would identify John as a soldier belonging to a particular unit or regiment, then it looks like you would have to visit The National Archives at Kew to see if you can seek-out some information, but it might not be worth the trouble until you have some substantive proof.
