found a Medal card for him on ancestry  - it has the same service number as the memorial  - 5576 and the corp is listed as 'R Ir Rif'.  I presume that for copyright reasons I should not post the full cert here but if you PM me you email address I'll send it to you.

details include military terminology that doesn't mean much to me - maybe someone can advise on what the details means..I've included a few below...

British Army WWI Medal Rolls Index Cards, 1914-1920
Name: Joseph Eakins     
Regiment or Corps  : Royal Irish Rifles     
Regimental number: 5/5576

The qualifying date is 5-Dec-1914 and it includes mention of various medals the phrase 'Pres? Dead' in red ink

this appears under action taken :

B.W.4.V.M.retd. (992 K.R. 1923) 8362/Adt.

Any newspaper mention will be unlikely to mention his age. Think census record will be best thing to try.
Away sorting out DNA matches... I may be gone for some time many years!

Thanks so much for your listing of the Eakins and variations - I never thought to try a different surname variant, but will have a good look at the site you kindly listed.

I'm inclined to go for the post 1870 births, as anything before were presumably mean he was too old in enrolling in the Army. But you may have listed a perfect match for him in County Leitrim (1879) - right age too.

there are two Joseph Eakins WW1 service records on Ancestry - one looks too young as he is 17 and unmarried. The other initially looked more promising and has about 13 pages of records  - age 35 and married. But his wifes name is Alice and he lived to the end of the war. It looks like he was discharged for being physically injured or unfit in some way.

I believe many of the early army records were destroyed in the Blitz.

Thanks for all your help Wayne - as you say the other Joseph Eakins don't quite fit the profile but I appreciate all your help with this.

I did read somewhere that a lot of the records had been destroyed during the blitz, and I don't hold out for too much other records existing, but never say never....
