Finding Gray's Inn Coffee House in 1841 census

Can someone give me advice on how to find an address - rather than a specific person - in the 1841 census? I'm especially keen to discover who lived at Gray's Inn Coffee House, Holborn, London at the time of the census.

My interest arises from a legal matter I have been researching: I've been looking at a Chancery suit of 1839 concerning the failure of William Hilton's executors to sell the Coffee House and its effects as William Hilton's will (proved 1829) instructed. It seems from the Chancery papers that William Hilton's wife (Lucy) and son (William) were running the business at the time the suit came to court, though I can find neither Lucy nor William Hilton in the 1841 census.
Any help and advice sincerely appreciated

You will find it at HO 107/ 670/ Book 8/ Folio 22/ Page 6
