I've done some more digging, and I have another possibility on who Mary Fields was (I agree with David that Mary Hubbard (nee Hall) was too old to be the mother of William born in the US in 1822).
Again, working backwards:
William Toder married Mary Fields (widowed) on 5 Oct 1806 in Wisbech.
THOMAS Fields was buried in Wisbech 23 Jun 1805.
Thomas Fields, bach, married Mary MELLON, spinster, on 3 Sep 1804 in Wisbech.
According to the passenger list for the Ardent, Mary Toder was 37 years old at the time of crossing to America (1821), which would put her birth year around 1784. However, I can't find any record of a Mary Mellon born around this time. Can anyone find a baptism record for her anywhere?
Does anyone see any errors in my reasoning, or is it fairly reasonable to guess that Mary Mellon is my ancestor? Thanks for all your help! And if anyone can find any information that would either confirm or deny this connection, it would be greatly appreciated!
