William and Jane Walton

Looking for info on William and Jane Walton.  William was born in Wymonham in 1826 according to the 1881 census, and his wife was born in Freeby in 1826 also.  I can find no Jane born in 1826 in IGI so I assume she was born somewhere near Freeby .  I was hoping that  in an earlier census she might have identified her birthplace as somewhere else or changed the date ( women are known to fib about their ages!).  I was also hoping to find William in an earlier census so I might discover his parents' names. There is a possiblitity that Jane's maiden name was Stafford so she might appear as such in an earlier census from Freeby or area. As always I greatly appreciate any direction someone might give me.

William Walton aged 45  born in  Wymondham, Leicestershire,  Head   

Jane Walton aged  45 born in  Freeby, Leicestershire, Wife 

Ellen Walton aged  11 born in  Wymondham, Leicestershire, Daughter 

and what looks like twins

Susanna Walton aged 8  born in Garthorpe, Leicestershire, Daughter 

Eliza Walton aged  8 born in  Garthorpe, Leicestershire, Daughter

But if Jane's maiden Name was Stafford then there is a Stafford family in Freeby on the 1841. Census :-
