They are the names given to the registrar.
So birth name, baptismal name, commonly-known-as name, take your pick...

All census look up transcriptions are Crown Copyright http://www.nationalarchives.gov.uk/

Were both Henry & Annie born in Antrim ? Reason I ask is this entry on
1891 census RG12/2911/90/61

Henry GRAHAM Head  b1844 Ireland Lab
Annie                wife    b1845 Liverpool
Charles             son    b1870 Liverpool
George                       b1872     ditto
Edward                      b1878      ditto
Daniel                        b1879      ditto

EDIT

also found this entry both born Ireland

RG12/4042/68/13

Henry GRAHAM 46 Born Ireland
Ann                  52    ditto
Thomas            29 Scotland
John                 26    ditto
Robert            17 Darlington, Durham
Henry               15    ditto
