Looking for details of the pub that was run by a William Jones in Rochester (Kent) in 1816

You might find someone on the Kent board who has specialist knowledge of the area.

Where did you find that he was a publican there?  If it is not from a register of recognisances you could see if those for Rochester have survived (in the relevant record office).  These always give publicans and sometimes the name of the pubs.

Poor rate books might have survived, a publican would almost certainly be a ratepayer or the tenant of a ratepayer and hence could be listed.  Sometimes pubs are named, at the very least you would get some idea of where the pub was in Rochester.

You could also try the Pub History Society, if they have an member in Rochester you could strike lucky.

Can only get back as far as 1824.

Pigot's Directory of Kent 1824 lists 40 pubs for Rochester, Kent. None has your William listed as "mine host" by this date.
