On the 1861 census my gt gt grandfather is a 'Pan Lite maker' as he is living at a brickyard am I right in thinking it is some sort of brick or tile?

Could it be a somewhat dyslexic version of "pan tile"?

quite possibly, he did a different job on each census but it was always at a brickyard , just a different one on each census.

Panlite is a trade name for a moulding resin, I reckon Pan Tile is the best bet as stated by previous messages.
