So you are really looking for info on him after the 1861 census
What is Robina's marital status on later censuses?
If widow - have you checked Scotlands People for a death
Or do you mean you can't find any of the family after 1861 - not just Simon?

Hi
The Moray Heratige site
www.libindx.moray.gov.uk
has a Simon Fraser Baker applying for Poor Relief in 1879
Might be worth a look/enquiry
