Death certificate throws up a mystery

I have just received the death certificate of my 3 x great Grandmother Catherine Matthews and managed to throw up a mystery. The certificate reads

17.10.1912 at No 8 Court Merridale Street Wolverhampton Catherine Matthews aged 80 widow of Henry Matthews a gravedigger cause of death senility informant of death Elizabeth Matthews daughter in law present at the death of No 1 Court Williamson Street Wolverhampton

The age of Catherine is actually out by 9 years and we cannot trace her on the 1911 census but it is the correct relative she was born 1824 in Brewood. Elizabeth (1861) turned out to be the part of the mystery, I thought she was the wife of Samuel (1865 - 1908) but when I looked her up on the 1911 census she is married to Henry born 1858 (actually 1860) a bricklayer

Henry is the big mystery in this story. He was born 1860 in Wolvehampton and appears on the 1861 and 1871 census with his parents Henry and Catherine at Zoar Street Wolverhampton and then vanishes. We actually thought he had died in 1877 but this is the wrong Henry. On the 1911 census it states that Henry and Elizabeth have been married 10 years and there is a marriage on FreeBMD in 1900 of a Henry Matthews and on the same page an Elizabeth Sant. There is also a nephew called Edward Sant on the 1911 census which seems to confirm this is the right one

Has anyone any idea of how to trace Henry between 1881 and 1911 because all we are hitting is a brick wall

Forgot to ask - can you also post full details for Elizabeth as they married in 1900 she should also be on the 1901 census

He's down as a bricklayer and on his burial on 23.4.1935 he is listed as a labourer

I have just found Catherine on the 1911 at 7 Graisley Court Wolverhampton with son Frank (Francis) lodging with a Catherine Williams

I havent managed to find Elizabeth and Henry on the 1901 she was born 1861 Tettenhall according to the 1911 and I havent found her on any earlier census but she may have been a widow when she married Henry

What about the grandson aged 10  in 1911, Frederick Arrowsmith, his family are in Nantwich .
How does he fit in ?
Henry would be  about 43 when he was born, old enough to be a grandfather .

There is a Frederick H Arrowsmith listed 1/4 1901 in Wolverhampton but he doesnt show up on the census for 1901

There is a marriage of a Fred Arrowsmith and on the same page is a Harriett Ann Sant in 1900 in Wolverhampton so it looks as if it might be Elizabeths grandson

That makes  more sense, so the family in Nantwich are not linked.

There is no sign of Fred and Harriett Arrowsmith on the 1901 either although there is a Harriet Arrowsmith listed on the 1911 born 1881 Wolverhampton listed as married and has a son John aged 9 working as a housekeeper in another household

Guess what no sign of Harriet Sant anywhere before then
