Potato & Tripe Dealer

Apart from the obvious ingredients, can anyone shed any light as to this "occupation"  ??? 

She's a married woman living in Carlton, Notts and her beloved is a Railway Navvy on the 1901 census.  It seems she is working from home and working for herself.

Was this a local speciality for the workers or more popular fodder for the time  :P

Up until the mid 20th century tripe was a popular dish in the north west of England and maybe other areas too. I haven't come across a dealer  in potatoes and tripe before. In my own ancestry I have a couple of tripe dressers I guess this was someone who prepared the tripe  for sale as well as selling it. I don't know a great deal about the subject but I believe that tripe, and possibly other foodstuffs, was sold from private houses rather than regular shops. Maybe your ancestor ran her business this way ie without the need of special premises.

Is it possible that she was preparing commercial quantities of potatoes and tripe for sale from handcarts? It sounds like the sort of cheap hot meal that railroad navvies might purchase for their lunch.  Here in Texas we have an unincorporated suburb called Buda (pronounced BYOO-duh) that takes its name from a location at which railroad workers on the line from San Antonio to Austin would purchase tamales from handcarts operated by two Hispanic widows (viuda in Spanish).
