Charbonnier in Barnstaple

I'm trying to find out more info. about my gg uncle Theodore Charbonnier. He was born in Jersey in 1846, lived for some time in Bristol and the Isle of Wight and I last have him in Barnstaple in 1901, when he was the headmaster of an art school in the High Street. His wife was Sarah Ann (nee Morgan) and his children were:

Edith Mary Amelia (b.1877)
Frances Mary (b.1878)
Ethel Marie Elinor (b.1880)
Theodore William James (b.1883)

I am unable to trace what happened to him and his wife, or the children. I am also interested if anyone knows anything about the art school or his career as a teacher of art.
I would be grateful for any info at all.
