I don't know what all the references are as yet and how to find them. So with the info I have I can use that to back up my search to confirm that I know what I'm doing and then I can use the experience to start researching my wife's father.

The references are those used by The National Archives.
You can use them to locate a specific document.
FindMyPast allows census searches by reference. Ancestry also.

1841 and 1851 censuses have a classification code of HO107 (HO = Home Office, I think!).
1861 has the class RG09; 1871 has RG10; and so on up to 1911 which has RG14. (RG = Registrar General)

Within a class, TNA references by Piece Number, Folio Number and Page Number.
Sometimes we quote  as Crisane did (RG12 Piece 1627 Folio 44 Page 2); sometimes we shorten it! (RG12, 1627, 44, 2)

This could be the marriage of George and Ann but to be absolutely sure you need a birth certificate for one of their children to get Ann's maiden name.

1841 census records did not record the relationship of the people to each other also ages were supposed to be rounded down to the nearest five. Some enumerators did it others didn't. These appear to have been rounded don so the individuals could be up to 4 years older. Where born was not given either unless it was the county they were living in.

This is brilliant, thank you. I think with the references now explained I can explore further and start finding my way around. If I come up with any extra info I'll put it on here...not that I think that there can be much more to find as you've been so thorough. It will take me a bit of time to add all these details to my existing information and then when I've got enough time I'll start looking at my wife's parents details.
Is there anywhere on here that this info can be placed so that any future "Whites" can find it as it would be of benefit to them?

Glad to be of help.  The information is now out there for anyone to find. If you put William White at Maiden Bradley in to a search engine you will get lots of hits, including this thread. I haven't actually looked at them all but probably should have sooner because they seem to go back to the 1700's. You may be finding some new rellies :)
