So, if her maiden name was Edwards, it becomes difficult as both of the two baptisms identified had mothers called Ann

On the 1841 census, the eldest daughter listed is also called Ann.
If she was born Jan 1803 she would be 48, 58 and 68 on the censuses. If it was the October 1804 one, she'd be 46, 56 and 66. Ignoring the 1841 (when ages were rounded down) she seems to be 57 and 67 (not looked at the 1851 yet*). Ages on censuses are often wrong but she seems to be consistent - so it's a difficult one to call.
It could also be that her birth family were nonconformist and her baptism wouldn't appear in the parish records. William and I both have access to the local nonconformist records but they're not complete. It's worth checking though.
Do you have the names of the witnesses to her marriage?

* Added - just checked and she's 47 so consistent. Age at death 75, Sept q, 1879
