It appears that William's son,Andrew, was born in Ellon parish, from the 1891 census details. I am assuming that you have seen the birth certificate & that it named William as his father. Was there a corrected entry attached? Where exactly was he born? If it was at the place of your granny's work then that might give a clue as to the nearest possible father.
The poor relief applications would definately be worth checking.
Have you looked through all the school admission books? In my experience my ancestors changed school as often as 6 monthly,especially if their parents were farm/house servants. The child may have been known by another surname,either his mother's maiden name,stepfather's name or even the person's who brought him up.
If Andrew married,the certificate would give details of his father (if he knew about him) & whether he was still alive.
