Re the COPP family of Launceston I can see:

Mary bap 21 Jan 1753 died 19 Mar 1753
Elizabeth bap 13 May 1754
Margaret bap 02 May 1757

all with father John.

I wonder whether this is one of those parishes for which only the female baptisms have been transcribed!

FindMyPast has transcription of a John Copp bapt in Launceston 24 Dec 1750 - father John, mother not recorded.

Also marriage of a John Copp to Elizabeth Turner in Launceston 25 Feb 1749/50.
So the "old" aunt Mrs Moffat - nee Margaret Copp could be a great aunt as otherwise her year of birth (abt 1731) wouldn't fit

In case we need to know more about Richard, he had in 1823 the following kin mentioned in the will:

Living in Cornwall around Launceston:

Sister: Elizabeth [surname?] with children
Brother: John with children
Brother: William with children
Nephew: William Langman son of my late sister Mary

Living in or in the vicinity of London:

Brother: Roger with a son William and unnamed female children
Brother: Samuel with four legitimate children
Brother: Thomas with children.

Richard and siblings all matching names above baptised in Lawhitton, Cornwall children of William and Joan. Mary married Hugh Langman in Lawhitton on 29 Jan 1788.

Lawhitton is about two miles from Launceston.

Ah yes - terrific stuff firmly placing the family of Richard Symons near Launceston.

His sister Elizabeth's marriage is likely to be that of Elizabeth Symons to John Goumbe (he signed as Gumb), on 6 November 1788 at Lawhitton.

Looking back at Richard Symons' will, Elizabeth's surname appears to be Gumb.

So the Margaret Copp of the title has turned into three people!

Margaret Copp Moffett married Launceston 8 July 1765,  and if burial 4 Sep 1816 at St Mary Chatham, aged 84 is hers then birth abt 1731/2 (place unknown).

Margaret Copp Symons bapt 2 May 1757 Launceston married 1799 in Launceston, buried 20 November 1823, Chatham. So she was 42 when she married and Richard Symons a similar age.   

Margaret Copp James born abt 1774, married Chatham 1800, buried 1835 Chatham.

Margaret Copp James was said to be the daughter of a farmer near Exeter and to have been brought up by (great?) aunt Margaret Copp Moffett when her parents died.
The baptism at St Kerrian, Exeter looks feasible as does the marriage the previous year of John Copp to Mary Pyke in Exeter. The next step is to look for burials of John and Mary Copp in or near Exeter not too long after Margaret's birth. I would guess if she was "brought up" by the aunt Moffett, she would be quite young when her parents died.

William Moffett death 1790 Launceston
Mrs Moffat mentioned in 1799 in Launceston Land Tax
and in newspapers on FindMyPast: Margaret Moffett 1801 Launceston sale of 99 lease ( 3 lives) mentioned third life abt 27 years (could this be Margaret Copp James). also furniture etc of said Mrs Moffett . No mention of her as late, so could this be her selling up to go to Chatham with rest of family.
