Can someone please explain what GEDCOM files are and how you use them?  I read an article in a family history magazine but am none the wiser.

GEDcom files are just a one way that family tree files can be stored. Devised by the Mormons, and adopted by many.

Generally speaking most family history can read or write GEDcom file (or "import" & "export" them). So, if you want to send a copy of your family tree by email, or post it here on RootsChat, then it's a safe bet that if you send it as a GEDcom
".ged" then most people will be able to read the file, whatver software they use.
