Cuckfield churchyard falls within the Haywards Heath registration area and burials  go up to 2010 here
http://www.cuckfield.gov.uk/Cuckfield-PC/burial_registers_from_1855-13260.aspx

Haywards Heath cemetery records (it opened around 1920) are held at Haywards Heath Town Council but are not online and there will probably be a search charge, burials for St Wilfrid's Haywards Heath up to 1900 are online if you are a member of Sussex Family History Group.

Cremations for the Haywards Heath area are usually at the Surrey and Sussex crematorium at Worth or occasionally down in Brighton.  Eastbourne has a crematorium so why not contact them and ask?
It does depend on date though as to what is available.
